Introduction to Italian Cheese Making at Edgecombe

Join in at the picturesque barrel shed at Edgecombe Winery, drink in hand, for an engaging and informative masterclass on Italian cheesemaking.

Led by Edgecombe's in-house chef and cheesemaker, this fun and immersive session will guide you through the process of crafting a selection of simple, authentic Italian cheeses at home from locally sourced ingredients.

During the class, you’ll learn essential cheesemaking terminology and techniques, as well as where to find the tools and ingredients you’ll need to recreate each recipe at home. On the day, you will make fresh ricotta, indulgent mascarpone, and tangy caprino fresco and have the chance to sample each cheese, paired with fresh bread and artisan condiments, all made in-house. If you’d like a more substantial food offering, why not add on a cheese and charcuterie board to be served during the class?

Included in your experience is a tasting glass of premium Edgecombe wine on arrival and a tasting flight of the signature fortified range on conclusion, guided by Alf Edgecombe.

If you’re not driving and want to make a day of it, there is a bottomless drinks package to add - salute!

Whether you’re a curious beginner, a budding curd nerd, or a passionate foodie, come and join in for a day of fun and education and leave with the knowledge and confidence to embark on your own cheesemaking journey at home.

This two and a half hour workshop includes:

  • A welcome drink upon arrival
  • A foundational introduction to basic home cheesemaking methods
  • In-depth demonstrations of three Italian cheeses and their history
  • Tastings of all cheeses made on the day, accompanied by gourmet treats (including homemade tiramisu with the mascarpone!)
  • Take-home recipes and resources to confidently recreate each cheese on your own
  • A guided fortified wine tasting by Alf Edgecombe to conclude your day
  • Optional bottomless drinks package available for $30pp on booking
