Australian by birth but Texan by choice, Melbourne-born Jess Pryles is a woman obsessed with meat. Dubbed the Hardcore Carnivore, she hosts meat-themed TV shows. She co-founded the Australasian Barbecue Alliance. She has her own brand of Hardcore Carnivore barbecue seasonings and she even judges American barbecue competitions.
Fresh off the back of a jaunt to Mexico, she joins forces with Mandoon Executive Chef, Michael Hartnell, taking inspiration from the markets of Monterrey to prepare a Tex-Mex menu in the Swan Valley.
Presented by Australian Good Meat, Mandoon will be transformed into a carnivores’ paradise complete with a live cooking station. Guests will be seated under the stars to watch (and taste) as Pryles and Hartnell combine the best quality Aussie beef and lamb with open flame grilling techniques.
The menu will include the likes of ‘smoked pitmaster fat’ served with locally baked bread, lamb ribs cooked over fire, chili lime bavette steak with Jess’ ‘crack sauce’ and to finish off, a Texan ‘peanut brittle pie’ – washed down with premium Mandoon Estate wines and Homestead Brewery beer, all in the name of good eating and drinking. Napkins will be necessary!
