Oven baked scallops with garlic crust 

Ingredients: scallops
 
12 Scallops in ½ shell
½ an onion diced
½ cup of olive oil
1 clove of garlic finely chopped
½ cup breadcrumbs
½ teaspoon of crushed chilli
¼ cup of chopped parsley
 
Method

Reserve 1 tablespoon of olive oil. Clean Scallops and cut away from shell. Marinate in remaining oil and the chilli for 2 hours.
 
Sauté Onion in reserved olive oil until quite soft and pale gold.  Add garlic and sauté for 1 minute, then tip into a bowl and mix with parsley and bread crumbs. Place some of the bread mix on top of each scallop and place in shells bake at 210c for 3 – 5 minutes until bubbling and crust is light brown.
 
Serve with Coleslaw and fresh lemon wedges.
 
Ingredients: Asian Coleslaw
 
½ Chinese cabbage finely shredded
¼ red cabbage finely shredded
150g bean shoots
50g Fresh coriander leaves
¼ Spanish onion sliced
½ carrot grated
Mayonnaise
